Uncle Donald Schemerhorn's Carrot Cake

 This cake brings back some really wonderful childhood family happy memories. The summer before my senior year of high school , I took an art class at a college I was considering attending once I graduated.  During my summer at college  I visited my Aunt Melinda and Uncle Donald a few weekends. My uncle Donald was one of the best cooks this side of the Mississippi River. One of the weekends with them he made this carrot cake and served it warm with Breyer's vanilla ice cream on top and it was and still is the best carrot cake I've ever tasted.  Thanks Uncle Donald and Aunt Melinda. We love and miss you. So now without further a due, I'm sharing the recipe with you for.....

Uncle Donald Schemerhorn's Carrot Cake

Ingredients

2 cups chopped walnuts (I don't like walnuts so I use pecans)
2 1/2 cups self-rising flour
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
2 cups sugar
1 cup vegetable oil
4 large eggs (substitute flax egg go to https://www.instagram.com/p/BUuWdQnAGZD/ for recipe)
3 cups grated carrots
1 cup raisins (use dried cherries or pineapple if you prefer)
Non-stick spray (with flour) for baking (or shortening like Crisco and some flour to grease and flour the cake pan)

Special Equipment
Tube or angel-food cake pan

 Directions

Preheat oven to 350°. Sift together flour, cinnamon, and baking soda. Spray tube or angel-food cake pan with non-stick spray or grease and flour the pan. Beat sugar and oil at medium speed with an electric mixer until smooth. Add eggs, 1 at a time, beating until blended after each addition. Add flour mixture, beating at low speed just until blended. Fold in carrots, walnuts and raisins. Spoon batter into prepared pan. Bake at 350° for an hour or until a wooden pick inserted in center comes out clean. Cool in pan on wire racks 20 minutes. Remove from pans or wire rack to cake plate, and let cake cool 1 hour or until completely cool.  Serve warm and unfrosted actually, with vanilla ice cream on top. Sorry vegans this is  so good with REAL ice cream.
